Cocktail-Foam Mint & Lime 2

• 4 fresh mint leaves
• 1 tsp fine sugar or sugar syrup
• Juice of 1 lime
• 50 ml white rum
• Sparkling water
• Garnish: lime and mint
• Cocktail-Foam Mint & Lime

Place the ’thermo’ glass in the freezer before use. Put the mint, the sugar (or sugar syrup) and the lime juice into a mixing glass.

Muddle until the sugar has dissolved and the oils are released from the mint leaves. Add the rum, strain the lime mixture through a sieve into the glass, and top up with sparkling water.

Finish with ’Cocktail-Foam Mint & Lime’ and garnish with a sprig of mint and a lime wedge.
