Traditional Café-Glacé given a modern twist, full of surprising coffee flavours.

Ingredients

• Mocha ice cream
• Coffee
• Carré Cappucino
• Kletskop Dessert
• Carré Mokka-Chocoflakes
• Coffee foam
  • Lecithin
  • instant coffee
  • water
  • air pump
• Cress

Preparation

1. Scoop 3 scoops of ice cream.
2. Decorate the dish with the various garnishes.
3. For the foam: dissolve 3 tablespoons of instant coffee, add lecithin, mix well and attach the air pump.
4. Finish with some coffee foam and cress.
