Cocktail-Foam Mint & Lime 1

• 4 strawberries
• A few lime wedges
• 6—8 mint leaves
• 2 tsp cane sugar
• 50 ml apple juice
• 10 ml strawberry syrup
• 60 ml sparkling water
• Crushed ice
• Garnish: mint leaf and strawberry
• Cocktail-Foam Mint & Lime
• Coral Reef Glass 100% Chef (art. 160/0087)

Put the strawberries with the mint, the lime wedges and the sugar into a cocktail shaker.

Gently muddle with a muddler until the strawberries are crushed and the oils from the mint leaves are released.

Add the strawberry syrup and apple juice and shake in the shaker.

Pour the mixture into the glass and fill with crushed ice.

Top with sparkling water and stir with a long spoon.

Finish the cocktail with ‘Cocktail-Foam Mint & Lime’ and garnish with a strawberry and a sprig of mint.
